I mean multiple textures that each apply to a DIFFERENT and INDIVIDUAL models in the same SCENE.

Create model, add a material to it.
Create another model, assign an old material or add a new one.
And so on...

you can 'register' one albedo texture on one object. so you can have so much albedo textures as objects

You know how to select different objects in the view port? notice how each set can have different material from each other. When you are done assigning one object then you just choose another object and start the prosess over again until all your objects have materials. and it would be nice to see a screen capture of your trouble so we can see what excactly you have trouble with.

You can have one albedo per material, you can have multiple materials on one object.

here is a simple example. as you can see this is one object with 3 different materials and each material have different texture
